A camera fixed two and a half metres down beneath a private dock in the Lower Keys, pointing into open water. There is no reef here and no feeding — just pilings, sand, and whatever swims past a structure that fish have learned is worth investigating.

The regulars are snapper, tarpon and barracuda. The prize is the goliath grouper, a fish that reaches well over two metres and simply materialises out of the haze like a piece of the seabed deciding to move. Nurse sharks and bull sharks come through too, and at night the lights bring in everything that hunts by them.

The Keys run on Eastern Time, UTC−5 and UTC−4 in summer. Visibility is the thing to check: calm days turn the water to glass, wind and rain turn it to soup. Late summer is goliath grouper spawning season, which is when the big ones gather.
